Since we have been preparing to go on vacation, we have been eating in a lot lately. Not only that, we have been eating in trying to use up odds and ends before leaving and trying to spend the least amount possible. So this inspired me to share with you what I have been learning about making something out of nothing: cooking with eclectic ingredients and coming out on top!

Yesterday, my friend and I decided to take advantage of the local Greek festival. I am a huge fan of Greek food, so I was delighted when my friend confessed to never having tried many of the amazing Greek dishes available. We chose to taste a variety of what the festival had to offer, and that inspired me to write a quick introduction to the many delights we tried, in case any of you might be wanting to explore this new food but are not sure what you might be getting yourself into. Today I am taking you on a journey to Huntington, West Virginia.

Now, I have to tell you I am quite biased toward this city. I lived in Huntington for four years as I was earning my degree from Marshall University. I made many close friends in this city, and I also met my husband here. I ate many a great meal in this city. I had quite a few laughs in this city. Simply, I love this city.

Welcome! Embark with me now on a journey to one of the United States’ most romantic places: Niagara Falls. Close your eyes and feel the cool spray of the water send shivers down your spine, despite this day being in early June. Listen to the powerful, yet calming, roar of the water. Open your eyes and take in the sites of couples strolling in the park, surrounded by trees and the sounds of the falls.
