NOTE: Sorry it’s been such a while since an update. I started this post on June 2, and then life got crazy!!

This is a soup I dreamed up that I originally intended to be somewhat healthy and even vegan. As you can see, neither goal was met….but this soup did turn out quite good. I warn you this is SPICY SPICY SPICY!! Even my husband and friend who ate it, who both like spicy foods, agreed this was SPICY-and that was AFTER I tried to tone it down. So if you don’t like Indian flavors or spicy foods, this isn’t the soup for you. But if you do, you are in for a TREAT! 🙂 Read the rest of this entry »

When I was about 13 years old, I complained to my horse riding instructor that I was tired. She explained to me that I was not tired, just uninspired. She asked me if someone were to give me two tickets to Paris, would I have enough energy to pack my bags and get on the plane? At the time I thought she was nuts. If you’re tired, you’re tired. And trust me, I have been down to the bones, falling asleep where I stand tired. But this day….this day, she may have been proven right.

Since we have been preparing to go on vacation, we have been eating in a lot lately. Not only that, we have been eating in trying to use up odds and ends before leaving and trying to spend the least amount possible. So this inspired me to share with you what I have been learning about making something out of nothing: cooking with eclectic ingredients and coming out on top!
